Fire-Roasted Tomato Soup Fire-roasted tomatoes give this classic comfort soup a great smoky flavor, and we’re using crushed tomatoes which add an unexpected slightly chunky texture that is really nice. We toss in a few cashews for creaminess, and add a pop of fresh basil. Delicious! This is a great soup to warm your belly on a blustery winter day, and you probably have most everything you need right in your pantry.. |

Gruyére-Style Cheese Gruyére cheese is named after it’s birthplace, a town in Switzerland, but isn’t it a French cheese? I think there was some controversy at the Swiss/French border over this beloved cheese back in the 16th century, but as an American, I only know it as fondue cheese! Back in the early 90’s, I remember dipping chunks of bread into steaming hot and melted Gruyére fondue at Geja’s, a dim and uber romantic restaurant in Chicago, which is still around, by the way. Gruyére has a sweet, salty and mildly sharp taste, and ours is almost an exact replica! White wine gives it a subtle sharpness, and a touch of maple syrup gives it a touch of sweetness. This cheese is perfect for fondue, and also as the star of our French Onion Grilled Cheese. |
