Hello, October! Fall is officially here! And in Chicago, that means cool days, and even cooler nights. The air is crisp, the leaves are starting to turn, and this means we are starting to crave warm, comfort food. We love it! This week, we decided to do a little tribute to that big, beautiful, cruciferous, crunchy, white veggie that we call Cauliflower! If you’ve fallen out of love with cauliflower, but want to rekindle that old flame, we can help! Cauliflower is often overlooked—it’s always that last-to-be-eaten, raw veggie, next to the Ranch dip on the party platter. Poor thing! But, when you prepare it in all of the right ways, it turns out that it’s super delicious! When you roast it, it becomes caramelized, and has a mild, nutty taste. And, it’s very versatile, like a potato—you can roast it, mash it, bake it, bread it, fry it, make a pizza crust out of it, make a soup from it, rice it, and make steaks out of it. Did you know that it’s actually a flower that is not yet fully developed? It’s one of the most nutritious vegetables around, and this means it’s loaded with vitamins and minerals—vitamin C, K, B9 and B6. Just 1 cup of this stuff contains about 75% of your recommended daily intake of vitamin C. Wowza! It’s full of water, so that means it’s super low in calories. Pasta Bake with Mushroom Cream Sauce, Cauliflower and Spinach This type of meal really brings me back to our childhood. Mom pulling a nice, big baking dish of deliciousness out of the oven. I can almost smell it now! Our Pasta Bake will give you the same warm, fuzzy feelings of comfort. We toss cauliflower, baby spinach, and pasta in a creamy mushroom sauce, which brings everything together, and then bake it. Once this pasta is in the oven, you’ll have time to make a quick side salad, and our delicious, crusty Garlic Bread! |
