We start our soup with dried white beans, we add garlic, thyme and fresh rosemary, and let it cook long and slow, so the flavors can really develop. As it cooks, the beans break down and get nice and creamy. Soup needs time, so it's even better the next day! |

Tostadas with Creamy Pintos and Mexican Street Corn Street vendors in Mexico sell corn-on-a-stick called "elotes", a beloved late-night snack. Typically they are dunked in a mayonnaise sauce, and sprinkled with spicy chili powder. For our Tostadas, we use creamy cashews, garlic and fresh lime to really bring this corn topping to life!
