Veggie Pho Pho, which is pronounced FUH, but we like to call it PHO (rhymes with dough), is a Vietnamese soup consisting of an aromatic broth, rice noodles and generously topped with bean sprouts, green onions, chilis, lime, and fresh herbs such as cilantro, mint and basil. It’s typically served with chili sauce or tamari on the side to flavor the broth and thin slices of beef. We skip the beef and add flavorful Shiitake mushrooms, baby bok choy, and tofu cubes. It’s fun to make bowls of toppings, so that everyone can add as much as they’d like of each to their individual bowls. You eat this soup with a spoon, but don’t forget the chopsticks! |

Veggie Lo Mein Lo mein, or “stirred noodles”, is a Chinese dish that is typically made with egg noodles, vegetables and meat or seafood. Our version is made with brown rice ramen or vermicelli, lots of veggies and a delicious and creamy sauce. Simple and amazingly delicious! |
