With Mardi Gras in our rearview mirror by only a few weeks, we thought we’d take a little culinary trip down to The Big Easy and fire-up your tastebuds with some tasty dishes from N’awlins! This week, we present you with our Ragin’ Cajun meal plan! Cajun Chicken-Style Po' Boys, Dirty Rice, Maque Choux (Stewed Corn) with Andouille-Style Sausage Crumbles, and Crispy Baked Cajun Fries with Spicy Aioli! With those, also come some delicious components as well: Cajun-Style Breaded Soy Curls, Remoulade, Spicy Aioli, Cajun Seasoning, and Andouille Sausage-Style Crumbles.

Dirty Rice Dirty rice is a traditional Louisiana dish made from rice which gets a "dirty" color from being cooked with meat, veggies and spices. We replace the meat with our delicious Andouille Sausage-Style Crumbles and Chicken-Style Soy Curls. This hearty dish can be served as a side, but is satisfying as a main dish as well. It takes a little time to make, but the results are well worth it! |

Maque Choux (Stewed Corn) with Andouille-Style Sausage Crumbles Maque Choux, pronounced MOCK-SHOO, is a traditional Louisiana dish. It contains corn, bell peppers, onions, and typically bacon for flavor. We skip the bacon and add our smoky Andouille Sausage-Style Crumbles instead, which gives it great flavor, texture, and also turns this typical side dish into a meal! |

Crispy Baked Cajun Fries with Spicy Aioli Most of us love fries! And, there is no need for oil. We cut our fries thinly, coat them in our smoky and spicy Cajun Seasoning, and bake them until they are nice and crispy. Our Spicy Aioli is the perfect dunking sauce that everyone will love. |

Remoulade Louisiana-style Remoulade is a mayonnaise based sauce that typically contains bits of herbs, capers, and pickles. We skip the mayo and add cashews for creaminess. This sauce is the star of our delicious Cajun Chicken-Style Po’ Boy Sandwiches, but it’s crazy good on anything! |

Spicy Aioli Aioli is a sauce made of mashed garlic, salt and olive oil, whipped into a very thick and creamy spread. It’s very close to mayo, but has its own distinct, delicious flavor. For our Spicy Aioli, we leave out the oil and add cashews to give it a delicious creaminess. We also add our Cajun Seasoning, giving it spicy NOLA flavors that we love. |

Cajun Seasoning There is absolutely no need to spend $5-$6 dollars at your grocery store for a Cajun spice blend, when it’s so easy to make yourself in minutes. And, you probably have everything you need in your spice cabinet already! We add smoked paprika for smokiness, and cayenne pepper for a little kick! Store bought Cajun spice blends are typically very salty, so by adding more of the Cajun flavors, you also add way too much salt. We cut down on the salt, so the Cajun flavors can really stand out. It's time to get your Ragin' Cajun on! |
