Our Chipotle Mac and Cheese is creamy and dreamy with a spicy kick! First, you’ll make a delicious cheese sauce with chipotle peppers, cashews for creaminess and cheesy nutritional yeast. You’ll throw your sauce right into a pot with whole grain elbow macaroni, corn, black beans and tomatoes. One pot, and fabulous. You have to try this one!

Next is our Crispy Tofu Salad with Sweet Ginger Dressing. If you’ve never had tofu, I can’t think of a better introduction. We figured out a way to make it super crispy on the outside, and nice and tender on the inside—with just 2 ingredients! The warm and crispy tofu is fantastic with the crisp, and crunchy salad veggies. The flavor combination going on in this salad is crazy—ginger, garlic, cucumber, scallion, peanuts and warm, crispy tofu—wow! |

Our Minestrone soup will keep you warm and cozy as you wait for spring to arrive. Did you know that this traditional Italian soup was created to use up leftover vegetables? I love that. Pasta was thrown in, along with some beans and a handful of cheese. We do the same thing, using our Cashew Parmesan. Have you made this yet?
