It's creamy and delicious, and the lemon zest gives it a great, bright freshness that will make you think of birds chirping and bunnies hopping! Make sure to make our Almond Parmesan to sprinkle on top. It’s sooooo good. You’ll want to sprinkle it on everything, and all you have to do is add a few ingredients to a bowl and mix. Give it a try! Isn’t it crazy that you can eat creamy, delicious pasta like this, made from 100% plants and nourish your body with every single bite? I love that. You can swap out the yellow squash for zucchini, if you’d like.

Our Coconut Red Lentils and Quinoa is one of my very favorite SmartyPlants dishes! The quinoa is light and fluffy and the red lentils that are hiding inside melt away, giving it an amazing creaminess. The coconut milk and toasty spices add crazy good flavor. This one is a must try. Don’t forget to add a few jalapeño slices on top for a kick!

Mediterranean Salad with Almond Feta
The Almond Feta is the star of the show here. Yes, we’re making our own feta cheese! It’s super simple to make and it’s delicious. Just like feta! Make sure to make it for this salad, because it adds that great healthy-fat flavor we love. This recipe makes a salad platter for 4 people, but it’s super easy to adjust and make only what you need. Just look at how beautiful and vibrant this salad is! Make it this week, and eat up all of those phytochemicals and antioxidants that you can only get from plants!
