Happy Memorial Day Weekend!

We’re sure your BBQ grills will be blazing, family and friends will be gathering, and backyard parties will be hoppin’ this weekend.

And, we 🌱plant-eaters🌱 never have to feel left out! For this meal plan, we thought we’d get you started with a few tasty creations for your party or BBQ. If you haven’t dusted off your grill yet, no worries. You don’t actually need a grill for any of this week’s recipes! They are actually BBQ themed, scrumptious and simple-to-make!

Korean BBQ Sandwiches
What is Korean BBQ? The name refers to the Korean cuisine's method of grilling meat. But, we both know  it’s not about the meat…it’s about all of the flavors that come along with it. And typically those flavors are savory, spicy, sweet, bitter and fermented all rolled into one. For our plant-powered sandwiches, use Soy Curls as a base and toss them with a delicious sauce that screams Korean BBQ! It’s smoky, sweet and tangy and has a slight kick to it, but not too much. We top our Sandwiches with a crisp and crunchy slaw that is the perfect compliment. Make these scrumptious sandwiches for your next backyard BBQ and watch how quickly they disappear.

Zesty Italian Pasta Salad
Who doesn’t love pasta salad? White balsamic vinegar gives it zing, along with lots of zesty ingredients like red onions, Kalamata olives and pepperoncini. Arugula and basil add bright freshness, and we toss in our Almond Parmesan, too. This pasta salad is cool, refreshing, and every bite is something new. This colorful and fun dish is a great dish to bring to your next BBQ!

Classic Baked Beans
After making these beans, you’ll never want store-bought baked beans again, because there is nothing better than homemade beans cooked from scratch. We skip all of the added ingredients that come with canned beans and use things like onions, mustard, maple syrup and smoked paprika to make our delicious, sweet and smoky beans. They’re a perfect addition to summer picnics and barbecues, and the best part is that they are so simple to make. These classic baked beans are outstanding and everyone will go crazy over them!

Dad's Potato Salad
Bacon and eggs were the main flavors of our dad’s famous potato salad. It was one of his signature dishes that he would make during the summer when we were having burgers and any type of BBQ, and he was very proud of his recipe.  It was always a simple potato salad: potatoes, onions, hard boiled eggs, and bacon bits. He would fry the bacon until it was super crispy, crumble it up and mix it in. Then he would add mayonnaise, dash of yellow mustard, salt and pepper. That’s it! We have been missing having his creamy and simple potato salad and were thrilled when we came up with a mayo that was pretty much exactly what we needed to give it the flavor we love! And, a dash of smoked paprika is all we need to replace the yummy smoky bacon flavor. This Potato Salad is creamy and delicious and everyone will love it!
