This week, we’re celebrating beautiful black beans!
Beans used to be known as the musical fruit, but now they play a huge role in plant-based eating. Black beans, sometimes called black turtle beans, or frijoles negros (which literally translates to “black beans” in Spanish) are a staple food for many people all over the world.
They are creamy, slightly sweet, super delicious and incredibly healthy for you!
Black beans are loaded with antioxidants, fiber, protein and carbohydrates. They also contain vitamin A, vitamin C, calcium, folate, magnesium, iron and potassium, making them a nutritional powerhouse!
Eating beans can lower the level of “bad” cholesterol in your blood, which may reduce your risk of developing heart disease.
You can find black beans dried or canned in most grocery stores.
We absolutely love them!
We use them in tacos, tostadas, burritos, soup, salads, wraps, burgers and more!

Creamy Black Beans With Coconut Milk and Tomatoes Coconut milk adds a delicious creaminess to our black beans with just a hint of coconut flavor. We add garlic, onions, tomatoes, a jalapeño and spices that simmer with the beans and make them taste amazing. These beans are great over rice, stuffed into corn tortillas for tacos, layered onto crispy shells for tostadas or eaten right out of the pot with a spoon! |

Loaded Sweet Potatoes We are all busy, busy, busy! So that means sometimes it’s nice to keep things simple. We’re using our beloved Nacho Crema in this recipe, and if you make it ahead of time, along with roasting your sweet potatoes, you can have dinner on the table super quickly. Loaded potatoes are satisfying because they are filling, and when you add a delicious sauce, beans and some toppings, now you have a tasty meal. |

Instant Pot Black Beans With an Instant Pot, it only takes 55 minutes to cook dried black beans. Just toss them in with some water, seal the lid, and in 55 minutes it's time to eat! Dried beans can be stored in your pantry for up to a year, so if you're well stocked, you’ll never need to worry about having cans on hand for any of your favorite black bean recipes. |
