Summer herbs are booming right now! Basil, rosemary, chives, thyme, tarragon, mint, parsley and dill—OH MY! 🌱🍃🪴

Freshly picked herbs are the best! Toss them onto any dish for an instant burst of freshness. For your recipes this week, we’re using fresh basil, chives, thyme and tarragon🌱🍃🪴If you have an herb garden growing, then you know how nice it is to walk outside and snip, snip, snip—a little of this, a little of that. And, they really grow fast and just keep growing and growing!

☀️Summer☀️—It turns me upside down! If you caught that Cars song reference, good for you! Yes, we’re still into the dog-days of summer and we’re loving it. It’s been sunny and hot (like, really hot last week in some parts of the country) So, we thought we’d keep things light and summery!

We’re using summer veggies and fresh herbs to bring you 2 main dishes, a side and a dessert to cool you off! ❄️

In addition to all of that deliciousness, we added another tasty dressing to the mix too!

This week’s recipes include:

⭐Roasted Spaghetti Squash with Ratatouille⭐
⭐Creamy Roasted Garlic Soup⭐
Tarragon Potato Salad⭐
⭐Tarragon Vinaigrette⭐

📣Judi and Phill review the newly released Weekly Meal Plan every Friday. You can catch it live on Fridays, or watch the replay in our Private Facebook Group, on our YouTube Channel, on our Twitter, or on our Facebook Business page.

Roasted Spaghetti Squash with Ratatouille
During the heat of summer, it’s nice to lighten things up a bit. So, for this dish we roast spaghetti squash and use it as a pasta substitute. It's sweet and delicious and just as satisfying! We top it with ratatouille, a french provencal dish of sautéed tomatoes, zucchini and eggplant—and fresh basil ribbons for a burst of summer herbs. Bon appétit!

Creamy Roasted Garlic Soup
Don’t let the word garlic scare you! When you roast garlic in the oven, it loses its pungency, obtains a sweet and toasty flavor and gets nice and creamy. If you love roasted garlic as much as we do, you are going to love this delicious, simple soup.

Our tangy Tarragon Vinaigrette is all you need to dress up creamy and tender red potatoes. Dijon mustard gives it a zippy punch and fresh tarragon adds a burst of brightness. This simple potato salad can be served warm or chilled and it’s a great little summer side dish.
