Don’t you just love fall?
Cozy, crackling, crisp, crunchy, earthy, brisk, orange, bountiful and invigorating. It’s time to pull out our sweaters, sip some hot cocoa, and turn on the football game.
This week, we’re excited to share some of our fall favorites with you! And, we’ve got plenty more heading your way—we’re just getting warmed up (see what I did there?).
Fall is the time of year when backyard fire pits are blazing, and that sweet campfire smell is in the air. We wanted to bring some of that heavenly scent indoors, so we added smoky Chipotle peppers to 2 of our dishes. And, if you make both dishes this week, you’ll only have to open one can of Chipotle peppers. Isn’t that great? No more wondering what to do with the leftover peppers. Or, is that just me?
And, as we like to do, we kept the recipes nice and simple, so you can spend more time at the pumpkin patch, raking leaves, going for a nature hike, or getting lost in a corn maze.

Chipotle Beans and Rice Tacos with Fresh Lime
Beans and Rice may make these tacos sound simple, but they are jam-packed with flavor! Our Chipotle Sauce gives these protein-packed cuties a creamy smokiness that is to die for. The fresh lime we drizzle on to (skins and all!) is a perfect zesty topping. What an incredible, quick and simple meal that will soon become a favorite.
|Loaded Potato and Sausage Hash
Breakfast for dinner? Yes, please! The name “hash” comes from the French word “hacer”, meaning “to chop”. Hash was invented as a way to use leftovers—chop them up, and scramble them! Typically, hash is made from some combination of chopped meat, potatoes and onions. Our plant-powered Hash is loaded with our beloved Italian Sausage Tofu Crumbles, hearty potatoes, juicy mushrooms, sweet onions, and baby spinach. All you need is a side of whole grain toast, and some hot sauce, and it’s time for dinner.
