First, toast the bread the way you like it.
Cut the avocado in half and using a spoon, scoop out each half from its peel, keeping them in large chunks.
Place ½ of the avocado on each slice of toast. Using the back of a fork, roughly mash the avocado onto the toast, keeping it a bit chunky. Layer on your sliced tomatoes. Sprinkle with crushed red pepper, sea salt and give it a few turns of black pepper. Yum!
Additional Toppings: Microgreens or thinly sliced cucumber.
