Chocolate Chia Pudding

Growing up, our dad loved to make pudding as a treat. We would often see our individual pudding cups cooling in the fridge, with plastic wrap pulled tightly across the top. This healthy version satisfies even the biggest pudding connoisseurs.


6 tablespoons white chia seeds
2 tablespoons cacao powder
1 13.5 oz. can coconut milk
4 tablespoons 100% pure maple syrup


  1. Mix everything together in a mixing bowl and let it sit for 15 minutes.

  2. After 15 minutes, mix well to incorporate. Then, put your Chocolate Chia Pudding into a sealed container and pop it in the fridge overnight or for at least 4 hours.

  3. I love having this topped with chopped walnuts and coconut flakes. Add your favorites!

Make sure to stir your coconut milk up well before using it!
