Blend all of your ingredients in a high-speed blender for about one minute, until smooth and creamy. You may need to stop to scrape the sides down a few times.
The dressing will thicken as it sits, so you may need to add a bit more water to thin later.
Store in the fridge for up to a week.
This dressing is great for salads, over baked sweet potatoes, drizzled over rice bowls, and in wraps.
You may find hemp seeds sold as Hemp Hearts. Same thing!
