Peanut Butter Granola

Makes about 4 cups
Why buy sugary, store-bought granola when you can easily make a delicious and healthy version yourself? Have this for breakfast with your favorite plant-based milk, or eat it on-the-go as a snack.

Ingredients

1 cup peanut butter, no added oil or sugar
1 cup 100% pure maple syrup
2 tablespoons vanilla extract
1 teaspoon sea salt, more to taste
6  Medjool dates, pitted
3/4 cup water
4 cups old fashioned rolled oats

Directions

  1. Preheat the oven to 300° F and line a large baking sheet with parchment paper. You might have to use 2 baking sheets if they are on the smaller side.

  2. In a high-speed blender, blend peanut butter, maple syrup, vanilla, sea salt, dates, and water until creamy.

  3. In a large bowl, combine the oats with your peanut butter mixture. Mix it all together until the oats are well coated. Spread the mixture evenly over the parchment paper on the baking sheet.

  4. Bake for one hour, or a bit longer, until the oats are lightly browned and crispy. After 30 minutes, toss your Granola with a spatula, breaking it up into larger chunks. It will still be soft and chewy at this point. If you used 2 baking sheets, switch racks going back into the oven. When your Granola is done, turn the oven off, and leave it in the oven for another hour, or until it has completely cooled. This step is important because it is key to getting nice, crunchy Granola! The longer it sits, the crispier it gets. I like to add a sprinkle of sea salt to finish it, but that's entirely up to you!

Recipe Notes

Have it as a snack, or for breakfast, with your favorite plant milk and sliced bananas.

Try tossing in some chopped nuts or seeds after mixing the oats with the peanut butter mixture and before going into the oven!
