First, line a baking sheet with parchment paper.
Add the dates to your food processor, and process on high until a date ball forms. Wait for it, it will! Set the date ball aside for now.
To the food processor, add the oats, almond flour, walnuts, pumpkin pie spice, and salt, and blend for about 30 seconds, or until it blends into a powder.
Add the vanilla, the pumpkin purée, maple syrup and a scoop of the dates, and blend to combine. Keep adding scoops of dates and blending, until all of the dates are incorporated.
Scoop about a tablespoon at a time of the dough, and form them into balls with your hands.
Roll some of them in coconut flakes if you’d like!
Place the Balls onto your prepared baking sheet, and place the sheet in the freezer for a half hour so they can firm up.
Eat one immediately for a sweet treat, or anytime you need one!
Store in an air-tight container in the fridge for up to a week, or in the freezer for up to a month. They should stay relatively chewy, even in the freezer.
If you can't find Pumpkin Pie Spice—here is a quick way to make it: Mix together 3 tablespoons of cinnamon, 2 teaspoons of nutmeg, 2 teaspoons ground ginger, 1 1/2 teaspoons allspice, 1 1/2 teaspoons ground cloves. That's it! Store in your pantry with your other spices.
