Quinoa with Spinach and Chickpeas

This is great if you have leftover quinoa in the fridge, or a bag of frozen quinoa in the freezer. It’s so easy to make and you can even make it in the morning and bring it with you to eat at work. What a fabulous, nutrient-packed way to start your day!

Ingredients

1 cup quinoa, uncooked
1 clove garlic, minced
3 handfuls baby spinach
1/2 cup garbanzo beans, drained and rinsed
1 tablespoon coconut aminos
1 pinch crushed red pepper flakes, optional

Directions

  1. Cook the quinoa according to package directions. When it's ready, add a big scoop to a serving bowl and set aside.

  2. Set a sauté pan on low heat and add the garlic with a splash of water. Cook for about 1 minute until the garlic is fragrant and then add the spinach and another splash of water. Keep stirring until the spinach wilts, about 2 minutes. Add the garbanzo beans and the coconut aminos and mix to combine. Cook for another minute, just to heat things up.

  3. Grab your bowl of quinoa and add the spinach mixture on top. Add another splash of coconut aminos for flavor if you’d like and the crushed red pepper for heat!

Recipe Notes

Smarty Time Saver: You can also use frozen quinoa and heat it up in the microwave for 1 minute.
