Cook the quinoa according to package directions. When it's ready, add a big scoop to a serving bowl and set aside.
Set a sauté pan on low heat and add the garlic with a splash of water. Cook for about 1 minute until the garlic is fragrant and then add the spinach and another splash of water. Keep stirring until the spinach wilts, about 2 minutes. Add the garbanzo beans and the coconut aminos and mix to combine. Cook for another minute, just to heat things up.
Grab your bowl of quinoa and add the spinach mixture on top. Add another splash of coconut aminos for flavor if you’d like and the crushed red pepper for heat!
Smarty Time Saver: You can also use frozen quinoa and heat it up in the microwave for 1 minute.
