This week, we have 3 crazy good meals for you to make!

Our Loaded Baked Potato Soup has all the amazing flavors that you love about a baked potato—the satisfying, creamy potatoes, the crispy bacon bits, the fresh green onions and a hint of black pepper. Holy Baked Potato! Yes, you heard me right when I said bacon bits. We’re making them out of coconut strips, and they come out of the oven crispy and smoky, and they’re a perfect topping to our soup. The handful of cashews that are blended into our soup make it nice and creamy. Don’t miss this one—it’s super simple, comfy and cozy, with just a couple of ingredients. I mean, look at this soup!

For Taco Tuesday, we’re making Taquitos with Jalapeño Lime Crema, or ‘little tacos”. We take corn tortillas, stuff them with mashed potato, black bean and corn deliciousness. Then, we roll them up, and bake them until they come out nice and crispy. Our Jalapeño Lime Crema is a crazy-good drizzle sauce for these fun, crispy, delicious, rolled-up little tacos—wow!

Our Rotini with Creamy Tomato Vodka Sauce is so decadently delicious, that it will be hard to remember that you are eating all plant-foods, and nourishing your body at the same time. It’s creamy, cheesy and satisfying, without the guilt. Our Almond Parmesan is the perfect topping to this super simple pasta.
