In a large bowl, mix together the soy curls and boiling water. Let sit for 20 minutes, stirring occasionally, until the soy curls are rehydrated and the water is absorbed.
Add the tamari, nutritional yeast, salt, granulated garlic, granulated onion, and black and white pepper to the rehydrated soy curls. Mix until soy curls are well coated.
Preheat a large non-stick skillet over medium-low heat. Add the seasoned soy curls and cook, stirring as necessary to keep them from burning, about 25 minutes until browned, crisped on some edges and have a chewy texture. Adjust seasonings to taste.
Remove from heat and use in a recipe, or let cool and refrigerate up to 5 days until ready to use.
