Preheat your oven to 450° F and line a baking sheet with parchment paper or a silicone baking mat.
Grab your potatoes and slice them into fries. Start lengthwise and carefully make vertical slices. Lay each section flat on a cutting board and cut them into half inch wide fries.
Place your fries in a bowl of cold water, and soak them for 15 minutes. Drain the fries, and pat them dry with a clean kitchen towel. And the fries back to the bowl they were soaking in. You may need to give the bowl a quick wipe with a dry towel before you place the fries back in.
To a small bowl, add the onion, garlic, smoked paprika, salt and pepper and mix well. Sprinkle the mixed spices onto the fries, and toss them in the bowl to evenly coat them.
Spread the fries out on the prepared baking sheet so they are lying flat and not touching. Bake your fries for 25-30 minutes, or until they're crispy. Check them after 20 minutes, and carefully flip them over using tongs, to crisp up the other side. Taste and adjust seasonings and salt.
