Combine all of the ingredients in a jar with a tight-fitting lid. Stir and shake to combine. Refrigerate overnight. In the morning, stir and add the toppings of your choice and enjoy!
Additional Toppings: Sliced fruit, berries, nuts, seeds, shredded coconut, chopped Medjool dates, granola.
You can also add 1 tablespoon of nut butter (almond, cashew, peanut) the night before to give the oats an extra creaminess. Frozen fruit and berries are great to use, too.
You can replace the soy milk with your favorite plant-based milk. Try unsweetened vanilla almond milk!
